Arabica and Robusta, Actually Explained

Two species account for essentially all the coffee in the world: Coffea arabica, and Coffea canephora, which the trade calls robusta.

Arabica is sweeter, more acidic and more aromatic, grows at higher altitude, yields less, and carries roughly 1.2 to 1.5 percent caffeine by dry weight. Robusta is more bitter and more rubbery, grows hot and low, resists disease, yields more, costs less, and carries roughly 2.2 to 2.7 percent caffeine, close to double. That is the practical difference, and it is why almost everything sold as specialty coffee is arabica.

The relationship is not what you think

Robusta is not arabica's poor cousin. It is arabica's parent.

Arabica arose from a natural cross between robusta and a third species, Coffea eugenioides, most likely somewhere near what is now South Sudan. Arabica is the hybrid. Robusta is one of the two things it was made from.

That single fact quietly dismantles the way the species is usually talked about. Robusta is not a degraded version of arabica. It is an older, hardier, differently-shaped plant that happens to be one of arabica's ancestors, and the reason arabica tastes the way it does is partly the other parent.

Why the compositions differ

The numbers explain most of the flavour difference.

More sugar and more oil give arabica its sweetness, body and aromatic complexity. Caffeine is bitter, so roughly double the caffeine is a meaningful part of why robusta tastes harsher.

Caffeine is also the reason robusta grows where it does. It functions as a natural insecticide, and robusta evolved at lower, hotter altitudes with more insect pressure. The bitterness that makes it harder to drink is the same chemistry that makes it easier to farm.

The one place robusta is genuinely better

Its lower oil content produces a thicker, more stable crema. That is precisely why traditional Italian espresso blends include it, and why an all-arabica espresso often produces less foam than people expect.

So if you have ever judged an espresso by its crema, you have been running a test that systematically ranks the cheaper bean higher.

What this will not tell you

It will not tell you which bag to buy. Species is a much weaker predictor of quality than grade, origin, processing and freshness, and "100% Arabica" on a supermarket bag is a floor rather than a promise. A defective low-grade arabica is worse than a well-grown, carefully processed robusta, and both exist.

It also will not tell you how much robusta is grown. Two of the most authoritative sources in coffee give figures that differ by roughly a third, and one of them explicitly notes the number is contested. Anyone quoting a precise global share with confidence is quoting an estimate.

Why this is changing

Robusta is being quietly reassessed, and not for taste reasons.

Arabica is the fussier plant: narrow temperature range, higher altitude, more vulnerable to leaf rust. As growing conditions shift, the hardier species becomes more attractive to farmers regardless of what the specialty market prefers. A category of deliberately well-grown "fine robusta" now exists, with its own grading qualification.

The species you were taught to avoid is being rehabilitated by climate rather than by palate, which is a more interesting story than the one on the back of most coffee bags.
